My new Cooking Series with Beatrice – Episode One

Hey guess what? Me and Bea did a cooking show with Awesomeness.tv ‘s new division, Awestruck ! Awestruck focuses on content for millennial women and young moms. Here’s a Variety article about it if you’re into that kind of thing.

This is Episode One. It was filmed a few months ago and it’s making me amazed at how much Bea has already changed in the months since then! Be on the lookout for the rest of the episodes to come! This first one I feel like we were a little wonky, we got more into the swing of things as the episodes go on : )

Healthy Homemade Toaster Pastries Recipe

Ingredients:

2 cups whole wheat flour
½ TSP salt
2 TB baking Stevia or sugar
3 TB almond milk (or skim milk) plus more if dough is dry
Olive oil for brushing
½ cup cold Earth Balance or butter , diced
8 TB no sugar added fruit preserves

Instructions:

  1. Preheat oven to 350. Whisk together the flour, sugar, and salt in a large bowl.
  2. Add in the cold butter or Earth Balance and mix with a mixer or by hand until the butter is fully incorporated and the mixture is crumbly.
  3. Add the milk and mix together until dough forms. Form the dough into a ball then wrap the dough in plastic wrap and refrigerate for about an hour.
  4. Remove dough from refrigerator, unwrap and place on a lightly floured surface. Roll the dough out with a rolling pin until it’s less than ¼ inch thick.
  5. Use a pizza cutter to cut rectangles in the size you’d like for your toaster pastries.
  6. Put 1-2 TB of filling into the center of half the rectangles, then top with a second rectangle and seal the edges by crimping the edges with a fork. Poke a few holes in the top of each pastry for steam to vent.
  7. Optional step: You can brush the top of each pastry with a bit of olive oil before baking to keep it softer.
  8. Bake for 13-17 minutes or until just starting to brown at the edges, then remove and cool on a rack.

After the pastries have cooled, drizzle with frosting and sprinkles and enjoy! You can use traditional powdered sugar icing, or there’s a healthier icing recipe included below. Toaster pastries can be frozen for up to 3 months and reheated in a toaster oven until hot.

Healthier Frosting Recipe

Ingredients:
1 cup coconut butter
2 TB honey
a couple drops vanilla extract
4 TSP skim milk or almond milk
Instructions:
Combine all ingredients except the milk in a food processor until smooth. Add the milk 1 teaspoon at a time until the mixture reaches the right consistency. Frosting will harden in the fridge so frost pastries before refrigeration.

    Considering I’m in the process of losing weight (well, trying to) and trying to eat better as well, this will definitely help in the snacking department. I’m going to give this a shot this weekend.
